Our History

A spirit born in Nacogdoches, Texas circa 1995, our cookoff team got its start in 2001 during the dog-days of summer in Schulenburg, Texas. Mainly a beer drinking team back in those days, we did manage to burn plenty of briskets and shotgun plenty of beers during Schulenburg festival, the first weekend of August each year. We managed to get smarter and our cooking improved, so we moved to Czhilispel in Flatonia, Texas, during much less sweatier October. From there we managed to cook some much better food and eventually made our way to Houston. In 2018 our cooks managed to make the finals in brisket and we were on our way. We secured our first space under our official “300 Justice Road” name in 2022 and we put on a hell of a party. 2023 was even better and we look forward to many great years to come. More fun, older, but not much wiser…

Our Cause

Commander Brian Bourgeois passed away on December 7, 2021 after succumbing to injuries sustained during a training exercise in Norfolk, Virginia. At the time of his death, he was serving as the Commanding Officer of SEAL Team EIGHT.

Brian was a 1997 graduate of James E. Taylor High School in Katy, Texas and was a friend and classmate to many folks on our team. Learn more about Brian and some of the ways you can honor his life and legacy in the link below.
