Our History

A spirit born in Nacogdoches, Texas circa 1995, our cookoff team got its start in 2001 during the dog-days of summer in Schulenburg, Texas. Mainly a beer drinking team back in those days, we did manage to burn plenty of briskets and shotgun plenty of beers during Schulenburg festival, the first weekend of August each year. We managed to get smarter and our cooking improved, so we moved to Czhilispel in Flatonia, Texas, during much less sweatier October. From there we managed to cook some much better food and eventually made our way to Houston. In 2018 our cooks managed to make the finals in brisket and we were on our way. We secured our first space under our official “300 Justice Road” name in 2022 and we put on a hell of a party. Each year after was even better and we look forward to many great years to come. More fun, older, but not much wiser…
